Chef JP Anglo and Joel Binamira on Balancing Tradition and Innovation in Filipino Food

(SPOT.ph) Filipino food continues to go places around the world, but two folks in particular have paved the way for Filipino food to thrive in our own country: Joel Binamira of Cebuano lechon spot Zubuchon, and JP Anglo of modern Negrenese spot Sarsa Kitchen + Bar. Aside from operating their own respective restaurants, both of which are highly acclaimed in their own right, the two had collaborated on the culinary travel show Show Me The Market in 2018, where they traveled the country and introduced us to local ingredients and purveyors; and reunited just last month when they held their special Zubuchon x Sarsa pop-up.

Though they admit to having different approaches to the cuisine—Binamira favors the traditional approach, while Anglo does not shy away from experimentation—they both express their enthusiasm at the way Filipino food is unfolding today. More and more Filipino chefs flying out to other countries, for instance—and it’s great, because they can make use of the techniques they learn from other cuisines to innovate our own. Ultimately, they share a common sentiment: that while there is clearly room for modernization in the cuisine, it must be done in such a way that pays tribute to its origins.
