KANSAS CITY — With a new year on its way, food entrepreneurs remain committed to bringing innovative formulations to market. Startups are creating alternatives to mainstream products and are using creativity as a point of differentiation. From plant-based cheese to protein bread to stew to functional energy drinks, where there is a will (and funding), there is a way for food entrepreneurs. Sustainability is one direction a lot of food entrepreneurs are taking their products. They want their food to be better for you, while also being better for the planet. Farm to Summit, which manufactures dehydrated, plant-based meals, chose omni-degradable bags to package their products. The business also supports local farmers and reduces food waste by formulating with vegetables that would be deemed “seconds” due to odd shapes and blemishes. Another direction where food entrepreneurs are leading the way is in functional products. The International Food Information Council’s 2023 Food & Health Survey showed nearly 75% of Americans believe the foods and beverages they choose have a significant or moderate impact on their mental and emotional wellness, and consumers are looking for something with a little extra. Founders Liam Gostencnik and Tim O’Sullivan are looking to enhance the experience of drinking alcohol with their product Bae Juice, which aims to take away a hangover. Bae Juice is considered a natural option for hangovers with it being 100% Korean pear juice. “This product is for those who enjoy the night life scene, but not the next morning,” Gostencnik said. Other companies like Fair and Square Crackers have goals to formulate healthier snacks for consumers facing dietary restrictions. “We’re trying to be an inclusive snack brand,” said Alex Duong, founder. “The idea is to make snacks that are inclusive for individuals that either have dietary restrictions or have family members with restrictions.
